I've just won a gift card. Exactly how do I use it? Do I just go to the store, select a card, and hit the add button?

Yes, that is correct.
Any card that can be bought can also be obtained with a gift card.
A gift card will not get a SEC, EX, or other exclusive card.
Make sure to click the 'use a gift card' in the collection.
On the card page make sure to click the blue icon, before the unlock button.
